“soft masseria yogurt dessert with seasonal fruit, biscuit, and Aglianico gel”
On the Regia Corte menu, every dish is a story. And among the most delicate and intense stories is that of the dessert, a sweet creation born from a careful study of Lucanian raw materials and the gastronomic traditions of the region’s villages.
Why Tito?
The heart of the dessert is artisanal yogurt, produced in the farmhouses of the Tito area, a Lucanian municipality with a strong agricultural and pastoral vocation. Here, the dairy tradition is still very much alive: milk is processed according to ancient methods handed down from generation to generation. This yogurt, thick and fragrant, tells a story of a “culture of slow and conscious craftsmanship,” which Regia Corte sought to honor by bringing it to the table.
The Chef chose to complete it
with an “Aglianico gel,” a wine that is the symbol of Basilicata, which provides a deep, tannic note in contrast with the natural sweetness of the seasonal fruit. The choice of fruit follows the rhythm of the land, in homage to the “seasonality” that has always guided Lucanian peasant cuisine.
In the historic center of Tito, events such as “food and wine trails” take place, where local families and associations open their doors to offer tastings of traditional dishes. It is in these contexts that one rediscovers the value of “home cooking,” which also inspired the simplicity and elegance of this dessert.
This dessert is not just a conclusion to the meal: it is a “journey through the flavors and knowledge of Basilicata,” with Tito as a fundamental stop. It is a way to tell, through sweetness, the beauty of a land that lives in its daily gestures, its rituals, and its ingredients.
